Poha is a popular Indian breakfast dish made with flattened rice flakes. Here's a simple recipe for making poha:

Ingredients:
- 2 cups poha (flattened rice flakes)
- 1 small onion, chopped
- 1-2 green chillies, finely chopped
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/4 cup roasted peanuts
- 1 tablespoon oil
- Salt to taste
- Fresh coriander leaves, chopped (optional)
- Lemon wedges (optional)

Instructions:

1. Rinse the poha in a colander under running water for 2-3 minutes, until the flakes become soft. Then drain the water completely and set the poha aside.

2. Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter for a few seconds.

3. Add chopped onions and green chillies and sauté for 2-3 minutes until the onions turn translucent.

4. Add turmeric powder and mix well.

5. Add the soaked poha to the pan and mix well. Add salt to taste and mix well again.

6. Cover the pan with a lid and let it cook on low heat for 3-4 minutes.

7. Add roasted peanuts and mix well.

8. Garnish with chopped coriander leaves and lemon wedges (if using).

9. Serve hot and enjoy your delicious poha!
